Levain Bakery opened in 1995, after friends Pam Weekes and Connie McDonald had been baking bread for restaurants across New York City. Their small West 74th Street shop borrowed its name from the French word for leavened bread.
At the outset, a compact team made baguettes, rolls, and loaves by hand each day. Triathlon training then prompted Pam Weekes and Connie McDonald to bake a sizable chocolate chip walnut cookie; customers quickly bought the sample batch, and a bakery hallmark emerged.
In The Levain Way, that history becomes a philosophy of quality and craft, patient care, comforting celebration, vivid texture, and joy in cookies and other baking.

We’ve always been incredibly grateful for the support of the communities we’re a part of, and we strive to reciprocate that support in ways big and small. On opening day, our new bakeries donate all proceeds to a local charity organization, and at the end of every day thereafter, we donate all unsold baked goods. It brings us great pride to think of all the people who’ve been treated to a fresh cookie, a delicious bread roll, or a flavorful muffin in the midst of a challenging day.
